The rich legacy of this cuisine tells the story of Japanese farmers landing in Peru and using local ingredients to make their traditional dishes. Led by Chef Anibal Torres, an expert in the flavours and techniques of Nikkei cuisine, Yuzu places focus on creative ceviche dishes inspired by cuisine from Lima. All ingredients are sustainably line-caught by local fishermen using methods that do not impact the balance of the biosphere.
